Ethiopia Yirgacheffe Chelchele Washing Station
Oh how we have missed having a coffee from Ethiopia in our single origin rotation. Why we've gone nearly a year without one is anybody's guess. We probably just have to be better, it's as simple as that.
Over the last five years we have seen an uptick in producer specific lots coming out of Ethiopia. Some of this is due to market forces encouraging transparency, however, much of the ground game can be credited to forward thinking washing stations and exporters acknowledging market demand and creating, maintaining, and most importantly sharing traceability programs.
Chelchele is one such washing station. Located in the Yirgacheffe region, Chelchele receives cherry from smallholder growers in the area and processes them for export. The data that they collect on each lot is meticulously logged and recirculated back to producers to encourage development and adjustment. Most of the Ethiopian coffees we have featured have been dry processed. These beans from producer Hailu Abebe are fully washed and air dried on raised beds. The cup is clean and bright and the roast is light to bring out as much of the natural fruitiness as possible.
